
Hoisin Chicken Spring Rolls
Fresh rice paper rolls with hoisin chicken and crunchy veg, served with extra hoisin for dipping.

Ingredients
- 6–8 rice paper sheets
- 2 chicken breasts
- 1 tsp five-spice
- 2 tbsp hoisin sauce (+ extra to serve)
- 1 tsp honey
- 2 spring onions
- ½ cucumber
- A handful of red cabbage
- Oil for frying
- Salt and pepper
Method
1. Cook the chicken
Season the chicken with five-spice, hoisin, honey, salt and pepper and fry in a hot pan until golden and cooked through. Rest briefly, then slice thinly. Meanwhile, cut the cucumber into thin strips, the spring onion into fine strips and shred the red cabbage very thinly.
2. Roll
Soak a rice paper sheet briefly in lukewarm water until soft and lay it on a clean surface. Place some chicken, cucumber, spring onion and red cabbage in the middle. Fold in the sides and roll up tightly. Repeat with the rest.
3. Serve
Cut the spring rolls in half and serve with extra hoisin sauce.
