Spring salad with pan-fried halloumi, pear, pistachio and crispy prosciutto.

Ingredients

  • Mixed salad leaves
  • 1 pear
  • 1 block of halloumi
  • A few slices of prosciutto
  • A handful of pistachios
  • Juice of ½ lemon
  • Olive oil
  • Salt and pepper

Method

1. Prep and fry

Slice the pear thinly, cut the halloumi into slices and roughly chop the pistachios. Fry the halloumi in a hot pan until golden on both sides, then briefly fry the prosciutto until crispy.

2. Make the dressing

Whisk together olive oil, lemon juice, salt and pepper.

3. Assemble

Toss the salad leaves with some of the dressing and spread over a plate. Top with the pear, halloumi and crispy prosciutto, and finish with the pistachios and a little more dressing.
