Salmon crudo with citrus, passion fruit and jalapeño.

Ingredients

  • 200–250 g fresh salmon
  • 2 blood oranges
  • 1 lime
  • 1 passion fruit
  • 1 jalapeño
  • 1 tsp hot honey
  • A splash of olive oil (+ extra to finish)
  • Salt and pepper

Method

1. Make the dressing

Squeeze the juice of 1 blood orange and the lime and mix with the passion fruit, hot honey, a splash of olive oil, salt and pepper into a fresh dressing.

2. Prep the salmon & garnish

Cut the peel off the second blood orange and slice out the segments from between the membranes. Slice the salmon thinly and cut the jalapeño into fine rings.

3. Plate & finish

Arrange the salmon on a plate and tuck the blood orange segments in between. Spoon the dressing over the top, scatter the jalapeño across, and finish with a little extra olive oil.
