Smashed Pea Toast with Burrata

Smashed pea and basil toast topped with creamy burrata and juicy cherry tomatoes.

Ingredients

  • 2 slices of bread
  • 125 g peas
  • A handful of basil
  • 1–2 tbsp ricotta
  • A handful of grated Parmesan
  • 1 burrata
  • A handful of cherry tomatoes
  • Juice and zest of ½ lemon
  • Olive oil
  • Salt and pepper

Method

1. Make the pea spread

Boil the peas for 2–3 minutes and rinse briefly under cold water so they stay green. Blend or mash with the basil, ricotta, Parmesan, a splash of olive oil, lemon juice, salt and pepper into a coarse spread.

2. Toast and prep tomatoes

Meanwhile, toast the bread until golden. Halve the cherry tomatoes and toss with a little olive oil, salt and pepper.

3. Assemble

Spread the toast with the smashed peas and top with the burrata. Scatter the tomatoes over and finish with extra Parmesan, lemon zest, olive oil and freshly ground salt and pepper.
